The candlelit dining room at Cendre, dark panelled walls and white linen tables

Cendre

Six chapters. One fire.
A tasting menu told in ember and ash.

The chef's philosophy

We cook what the fire remembers.

Marius Valcourt trained in three kitchens and left all of them for a single idea: that a meal should unfold the way a story does, with a beginning you taste in the first minute and an ending you are still carrying home.

Everything at Cendre passes through flame, smoke or embers. Vegetables are buried in hay. Fish is hung over vine cuttings. Even the dessert is touched by ash. We buy from eleven growers within 90 kilometres of the restaurant, and when a farmer says the quince is not ready, the menu waits.

“A dish is finished when there is nothing left to take away. Then you add one thing: a reason to remember it.”Marius Valcourt, chef and owner
